515 Introduction to Family & Consumer Sciences
5 Credits
This introductory course, designed for freshmen, will include clothing construction, basic food preparation, nutrition, consumerism and basic child care. All areas will include verbal instruction as well as lab experience. The students must supply their own materials for projects in clothing construction.

Clothing I
5 Credits
This is a beginner level clothing class where students will be responsible for constructing various projects. Emphasis will be placed on reading patterns and following the correct sequence to complete a garment. Basic math skills will also be reinforced. Students provide their own materials for projects.
526 Clothing & Textiles II
5 Credits
Prerequisite: Clothing I
This course is designed for second year students who desire to expand their knowledge of textiles and to complete detailed construction projects. Students will work on fabrics including velvet, silk and leather using special techniques and equipment.

Careers in Tailoring III
5 Credits
Prerequisite: Clothing & Textiles II
This course is designed for the advanced clothing students. They will be able to recognize a well-constructed garment by tailoring an advanced jacket or other comparable garment. They will explore historic costumes through the ages.
546 Careers in Fashion
5 Credits
This course is designed for the advanced clothing student. Various careers in fashion will be explored as well as advanced clothing construction techniques. Emphasis will be put of properly fitting garments. The students will supply their own materials for projects.

Foods I
5 Credits
This is a lab course that introduces the students to foods and nutrition. It will lead to developing skills and knowledge needed to become an informed consumer and become nutritionally literate. By applying math and science principles to hands-on exercises and experiments, critical thinking and problem solving skills will be sharpened.

Foods II
5 Credits
Prerequisite: Foods I
The Foods II class is an advanced lab class for the serious student. The student will develop techniques in food preservation as well as advanced methods of food cookery and preparation. Basic nutrition concepts will be discussed with each food covered. Highlights of the classwork will come during the study of foreign foods, regional foods and holiday cookery. Also, the student will use equipment that encourages the economic use of resources.
549 Pastry Arts
5 Credits
Prerequisite: Must have taken a Foods course
This
lab course is designed for those interested in baking and cake decorating. It
is recommended for students considering a career in the culinary arts.

Tiger Den I
5 Credits
Prerequisite: Has completed either Food I or Food II and is recommended by either the teacher or the Family & Consumer Sciences supervisor.
This lab course gives the student an opportunity to develop skills in quantity food preparation, meal planning and nutrition analysis. The student will participate in both classroom and laboratory experiences. This course is part of the restaurant program and students prepare the food for the restaurant lunches.

Tiger Den II
10 Credits
Prerequisite: Teacher recommendation - Juniors & Seniors who have passed a Foods class
This lab course integrates the knowledge, skills and practices required for careers in food production and service. Students will perform all the duties in running the Tiger Den Restaurant.

Child Development
5 Credits
This course explores the beginning stages of fetal development through birth on to age three. This course will help students make important decisions related to parenthood and the essential aspects of self evaluation and responsibility in working with children. Students in this class will be exposed to all areas of career opportunities in early childhood and the responsibilities and characteristics of a successful early childhood education teacher.
539 Child Care
Practicum I
5 Credits
This course is open to students who are interested in the child care field. The class will be divided into classroom studies in the development of the child and the development of a portfolio of learning materials and activities suitable for preschoolers. The students will participate in teaching and assisting in the Tiger Tots Preschool as well as being assigned to various sites around the city. Students must have no more than ten absences for the entire semester prior to their enrollment in the program. Students are selected for this program after departmental review of their completed course application. Parental permission is required for participation in this program.
548 Child Care
Practicum II
10 Credits
Prerequisite: Passing grade in Child Care Practicum I and recommendation of the teacher.
Child Care reflects the link between course work and the actual work world. Through extensive lab experiences in the Tiger Tots Nursery School, local elementary schools, an area day care facility and Head Start, students will prepare for a career in child care or further academic studies in the field. Students may also qualify for licensing by the state as a day care teacher.

Nutrition
5 Credits
Meets 3rd year Science Elective Requirement
This
course is a study of the basic nutrients in food, their physiological function, and the importance of establishing good
eating habits. The scope of nutritional needs of the life cycle will be
considered. The importance of maintaining high health standards to avoid
illness will be stressed.
